The rutin (quercitin-3-rytinoside) is a hydrophilic molecule and isoquercitin (quercitin-3-glucoside), a naturally occurring glycoside of quercetin also known as isoquercetrin. Isoquercetrin can be obtained by enzymatic hydrolysis of rutin with hesperedinase, which has α-l-ramnosidase activity and removes the rhamnose radical of the rutin molecule.
